- Bougnat abstract "The (coal men) were immigrants from the Massif Central, in particular Aubrey, Viadène, mountains of Cantal (department of Auvergne), Planèze, and the Lot valley who settled in Paris, France. They initially worked as water-carriers (for the baths) in the 19th century, before working in the timber and coal trades, as well as in outlets for drinks (wine, lemonade). They switched from water bearing to coal and wine delivery during the Second French Empire, when the water system of the capital started to serve multistory buildings. Around this time, Parisians named these professionals "bougnats". There is speculation that this name originated from the connection between the colliers and the inhabitants of Auvergne due to the trade of the Brassac-Le Mines in Paris. They were known for being hard-working and forming a united community. While many Parisians cafés have changed owners, inhabitants of Aveyron’s cafes have kept their establishments. This situation is shown in the movie XXL (with Gérard Depardieu), where the director compares bougnats with the Jewish community of the Sentier district. The term currently refers to Parisian cafes that are owned by coal man. These businesses are both outlets for drink and coal. They were known to be established in working-class areas and are often called: “Wines and Coal”. The husband typically delivered coal, while his wife served the client's wine. Some owners supplement their income with catering and hostelry. There is at least one bougnat in Paris, which is on Emile-Lepeu’s street in the 11th arrondissement.Bougnat-speak began in the first half of the 20th century.".
